Earlier this month, we had the pleasure of touring and tasting at one of our local pickup partners – Etto Pasta! This family-owned pasta factory and market is passionate about using only the highest quality ingredients to create their artisanal products.
Located in the vibrant Tin City area of Paso Robles – surrounded by wineries, breweries, a creamery, and a distillery – Etto crafts a variety of pasta shapes using just two simple ingredients: organic durum semolina flour and pure water. Their process combines traditional techniques like bronze die extrusion and slow drying with state-of-the-art technology, including vacuum mixing and high-pressure extrusion. The result? A pasta that’s rich in flavor, high in nutrition, and free from genetic modification.
Despite the simplicity of the ingredients, each batch is high in protein, low in sugar, and packed with complex carbohydrates, providing lasting energy and nourishment.

Etto also offers tours Monday through Friday at 11 a.m., giving you an inside look at their pasta-making process.
