One of our favorite seasons of the year is just around the corner – corn season! Our bi-color sweet corn is a summertime favorite that will be making regular appearances in your boxes over the coming months. Whether you enjoy it simply grilled as a side dish or incorporate it into soups, salads, salsas, or pastas – sweet corn is one of the most versatile flavors of summer.
Did you know that less than 1% of the corn grown in the United States is harvested for people to eat? The vast majority is grown as field corn, which is used for livestock feed, ethanol production, and a variety of industrial food products. At Talley Farms, we’re proud to be part of the small percentage by growing sweet corn for our community to enjoy. California is one of the nation’s leading producers of sweet corn thanks to its long growing season, while states like Iowa and Illinois are best known for producing field corn.
The bi-color sweet corn we grow is non-GMO, meaning it is produced without the use of genetic engineering. In fact, the majority of fresh sweet corn sold on the cob is non-GMO. Unlike field corn, sweet corn is harvesting during the “milk stage,” when the natural kernels are tender, juicy, and naturally high in sugar. Once it’s picked, those natural sugars gradually begin converting to starch, which is why freshly harvested corn tastes the sweetest. To help preserve its sweetness at home, store your corn in the refrigerator with the husks still on until you’re ready to enjoy it.
