Get Creative With Your Winter Squash

You may find yourself adding more squash to your kitchen counter than you know what to do with—just staring at it and hoping some inspiration strikes. Winter squash shows up often in our boxes this time of year, and for good reason. It can be transformed into cozy, delicious dishes that truly shine at the dinner table. Plus, winter squash stores longer than most produce, making it easy to keep on hand and cook with whenever the mood strikes.

Winter squash is a celebration of fall’s bounty, coming in a variety of sizes, shapes, and flavors that work beautifully in all kinds of dishes. Some of the squash you’ll commonly see in our boxes include butternut, delicata, and acorn squash. Butternut squash is perfect for soups, purées, and roasting, while delicata and acorn squash really shine when baked or stuffed.

Butternut squash is a favorite to cook with here in the office. It’s incredibly versatile and can be used in Buddha bowls, curries, soups, and pastas—and most recently, as Michelle tested out, hummus! Delicata and acorn squash also make excellent bases for hearty, satisfying stuffed dishes.
