We are in the midst of winter on the Central Coast, but thanks to our steady climate there’s no shortage of beautiful fruits and veggies to enjoy! The farm is soaking up every ray of sunshine it can get, brimming with hearty squashes, leafy greens, and sweet roots and tubers. We will have plenty of variety in our boxes this month to keep things exciting, delicious, and always fresh.
Root vegetables are in their prime this time of year, as the crops concentrate their stored starches into sugars to keep from freezing. This defense mechanism produces the sweetest and most flavorful carrots, beets, radishes and potatoes that we grow. Cruciferous vegetables like kale, broccoli, cauliflower, and cabbage also undergo this “winter sweetening” process and are excellent in hearty winter dishes.
We are also overflowing with citrus to brighten up your meals. You can expect to find an assortment of oranges, grapefruit, lemons, and our beloved tangerines. Use fresh squeezed juice in salad dressings, smoothies, and even a refreshing glass of sparkling water to give your immune system a boost. Kiwis and apples will be featured in the boxes, as well, to be enjoyed throughout the month.
Specialty items like mushrooms, Japanese sweet potatoes, and leeks can turn a mainstream meal into a masterpiece.
