Apple and Brie Crostini

Ingredients

  • 1 French baguette, cut diagonally into 1/2 inch slices
  • 1 8oz wheel of brie cheese
  • 1-2 apples (or apple of your choice)
  • 4 slices of prosciutto
  • 1 bunch of arugula
  • Hot honey for drizzle
  • Pomegranate seeds (optional)

Directions

  1. Preheat the oven to 375 degrees F.
  2. Line a large baking sheet with aluminum foil and place baguette slices on top.
  3. Cut the brie into thin pieces and place on baguette slices. Bake bread and cheese for 10 minutes or so, until cheese is melted.
  4. While that is baking, tear prosciutto into 1 inch slices. Take bread and cheese out of oven, top with prosciutto, then bake for another 5 minutes.
  5. While that is finishing baking, thinly mandolin apple slices. Take crostini out of the oven and top with apple slices and arugula leaf, then drizzle with hot honey. If using pomegranate seeds, sprinkle over all crostinis. Serve immediately and enjoy!
