Salads
Apricot Black Bean Salad
Ingredients
1 avocado, peeled and cubed
Juice of 3 limes
Zest of 1 lime
5 apricots, sliced into 1/2 inch wedges
1 jalapeno pepper, trimmed, seeded, membrane removed, finely chopped
1 15-oz can black beans, drained, rinsed and dried with a paper towel
1 head of lettuce, leaves separated, ends trimmed, washed and dried
Directions
Gently combine the juice of one lime with the avocado cubes-Set aside for 10 minutes.
To make the dressing; combine juice of 2 limes, zest of 1 lime, and 1/4 of the finely chopped jalapeno in a small bowl-Set aside for 10 minutes.
Combine apricot wedges, avocado and dried black beans in a bowl. Add dressing and lightly toss. Taste – add more jalapeno for more heat.
Place 1/4 cup of salad in the base of one leaf of butter lettuce. Wrap like a taco or a burrito.
