Apricot Black Bean Salad

Ingredients

  • 1 avocado, peeled and cubed
  • Juice of 3 limes
  • Zest of 1 lime
  • 5 apricots, sliced into 1/2 inch wedges
  • 1 jalapeno pepper, trimmed, seeded, membrane removed, finely chopped
  • 1 15-oz can black beans, drained, rinsed and dried with a paper towel
  • 1 head of lettuce, leaves separated, ends trimmed, washed and dried

Directions

  1. Gently combine the juice of one lime with the avocado cubes-Set aside for 10 minutes.
  2. To make the dressing; combine juice of 2 limes, zest of 1 lime, and 1/4 of the finely chopped jalapeno in a small bowl-Set aside for 10 minutes.
  3. Combine apricot wedges, avocado and dried black beans in a bowl. Add dressing and lightly toss. Taste – add more jalapeno for more heat.
  4. Place 1/4 cup of salad in the base of one leaf of butter lettuce. Wrap like a taco or a burrito.
  5. Enjoy.
