Directions
Preheat the oven to 400 degrees F.
In a small mixing bowl, combine the olive oil, apricot jam, maple syrup, grainy mustard, dijon mustard and salt for the carrots.
Add the carrots to a baking sheet and brush on the sauce, drizzling on any last bits.
Bake for about 35-40 minutes or until the carrots are fork tender.
While the carrots are roasting, make the whipped goat cheese by combining all the ingredients in a medium mixing bowl. Using a hand mixer, mix until it’s smooth and creamy. You can also blend everything in a food processor.
Add the whipped goat cheese to a serving dish. Top with the roasted carrots. Scrape out any remaining glaze left on the baking sheet and drizzle over carrots. Then finish with preferred toppings and enjoy!
