Baked Orange Sweet Potatoes with Crunchy Crumble

Ingredients

For the sweet potatoes:

  • 4 medium orange sweet potatoes
  • Olive oil
  • ½ teaspoon Salt

For the crunchy crumble:

  • 1 cup cashews, roughly chopped
  • 1/2 cup dates, pitted and chopped
  • 1/2 cup crumbled feta cheese
  • 2 cups fresh arugula, roughly chopped
  • Zest of 1 orange
  • 1 tablespoon olive oil
  • 1 maple syrup
  •  ½ teaspoon Salt

Directions

  1. Preheat your oven to 400°F
  2. Wash the sweet potatoes thoroughly and slice sweet potatoes into thick wedges. Place the sweet potatoes on a lined baking sheet and drizzle lightly with olive oil. Season with salt
  3. Bake in the preheated oven for about 30-35 minutes, or until they are tender and golden brown. You can check for doneness by inserting a knife into the center; it should slide in easily.
  4. While the sweet potatoes are baking, prepare the crumble mixture. In a mixing bowl, combine the chopped cashews, chopped dates, crumbled feta, arugula, orange zest, olive oil, and maple syrup. Mix well until everything is combined. Season with salt.
  5. Once the sweet potatoes are done baking, remove them from the oven and place on a serving platter.  Top the wedges with the crunchy crumble.
  6. Serve warm, garnished with additional orange zest if desired. Enjoy!
