Blueberry French Toast Bake

Ingredients

  • 1 loaf brioche bread, sliced into triangles
  • 8 eggs
  • 2 cups milk
  • 1/2 cup heavy cream
  • 1/2 cup brown sugar
  • 1 Tbsp vanilla extract
  • 1/2 tsp salt
  • 1 cup fresh blueberries
  • 1 Tbsp coarse sugar for topping (optional)

Directions

  1. Take a loaf of brioche bread and slice into triangles. Line the triangles cut side down into a 9×13” baking dish. Don’t be afraid to pack them in tight!
  2. In a large bowl, whisk together the eggs, milk, cream, brown sugar, vanilla, and salt.
  3. Pour the egg mixture over the bread slices. Cover with plastic wrap and use another smaller baking dish to put on top and weigh the bread down so it can be submerged in the liquid. Let this sit for an hour before baking optimal flavor and texture.
  4. Preheat oven to 350 degrees. Uncover the soaked bread and sprinkle blueberries over the top, pressing them into the softened bread. Sprinkle the top with coarse sugar. Bake in the oven for 45-50 minutes or until the middle is set and the top is golden brown. Serve with butter and warm syrup!
