Breakfast Burritos with Pico De Gallo

Ingredients

  • 1-2 lbs Gold potatoes, diced
  • 1-2 Tbsps olive oil
  • 2 tsp salt
  • 1 tsp pepper
  • 2 tsp garlic powder
  • 2 tsp paprika
  • 4 slices bacon
  • 4 eggs
  • 1/4 cup cheese
  • 4 large flour tortillas

Directions

  1. Preheat oven to 400 F.
  2. In a small bowl, add diced potatoes, olive oil, salt, pepper, paprika, and garlic powder. Mix to coat potatoes, then spread onto a baking sheet in one even layer.
  3. Bake potatoes for 25 minutes or until golden brown.
  4. While potatoes are cooking, cook bacon in a pan until crispy. Set aside onto paper towels and discard oil
  5. Whisk eggs in a bowl, then add to the same pan you used for the bacon. Cook eggs until lightly scrambled.
  6. Grate cheese, heat tortillas over the stove top, and chop bacon into bits.
  7. To assemble burritos, add cooked potatoes, egg, cheese, and bacon. Wrap each burrito in foil and let warm in the oven’s residual heat from cooking the potatoes to help melt ingredients together.
