Broccoli Beef Bowl

Ingredients

  • 1 lb flank steak, cut into strips
  • 1 broccoli crown, trimmed
  • 1 Tbsp canola oil
  • 1 cup white rice

Marinade ingredients:

  • 1/2 cup soy sauce
  • 2 Tbsp sherry cooking wine
  • 1/2 cup brown sugar
  • 1 Tbsp sesame oil
  • 2 Tsp cornstarch
  • 1 garlic clove, minced
  • 1 green onion, white parts thinly sliced (reserve green parts)
  • 1 Tbsp ginger, grated

Directions

  1. Cook rice according to package instructions.
  2. Slice flank steak against the grain into thumb sized pieces.
  3. For the marinade, mix the soy sauce, sherry, brown sugar, sesame oil, cornstarch, garlic, green onion, and ginger.
  4. Pour HALF the marinade mixture over the flank steak and reserve the other half. Marinade at least 1 hour in the fridge.
  5. When ready to cook, heat a pan over medium high heat and add canola oil. Add flank steak pieces to the hot pan and discard marinade (try not to overcrowd the pan for better browning). After 2 minutes turn the meat and cook for an additional 2 minutes on the other side.
  6. Once browned, remove meat from the pan and add the broccoli florets. Immediately pour the reserved marinade into the pan and place a lid over the pan to steam broccoli in the sauce. Once the broccoli is cooked (about 2 minutes) return the beef to the pan and mix to coat in the sauce.
  7. Serve over white rice and garnish with green onion.
