8 oz cream cheese, room temperature, cut into cubes
2 cups shredded cheese, mozzarella or cheddar
1/2 cup sour cream or plain Greek yogurt
2 tbsp dijon mustard
1 tbsp olive oil oil
1 tsp dried thyme
Salt and black pepper, to taste
Directions
Preheat oven to 400 degrees and lightly grease a 9×13 baking dish, set aside.
In a large skillet, add olive oil and heat over medium-high heat. Add chopped broccoli and cauliflower to the skillet and cook for 8-10 minutes. Then transfer to casserole dish.
Next add chopped onion and sausage into the skillet and cook for 6-8 minutes until sausage is browned and onions are translucent. Then transfer to casserole dish on top of cauliflower and broccoli.
In a mixing bowl, combine cream cheese, sour cream or plain greek yogurt, 1 cup shredded cheese, dijon mustard, thyme, and salt + pepper. Mix all together until thoroughly incorporated.
Stir the mixture into the casserole dish and mix around until everything is well combined. Add remaining shredded cheese on top.
Bake for 20-25 minutes or until cheese golden brown.
