Broccoli, Cauliflower, and Sausage Casserole

Ingredients

  • 1 lb broccoli, cut into florets
  • 1 head cauliflower, cut into florets
  • 1 yellow onion, finely diced
  • 12 oz smoked sausage, sliced
  • 3 cloves garlic, minced
  • 8 oz cream cheese, room temperature, cut into cubes
  • 2 cups shredded cheese, mozzarella or cheddar
  • 1/2 cup sour cream or plain Greek yogurt
  • 2 tbsp dijon mustard
  • 1 tbsp olive oil oil
  • 1 tsp dried thyme
  • Salt and black pepper, to taste

Directions

  1. Preheat oven to 400 degrees and lightly grease a 9×13 baking dish, set aside.
  2. In a large skillet, add olive oil and heat over medium-high heat. Add chopped broccoli and cauliflower to the skillet and cook for 8-10 minutes. Then transfer to casserole dish.
  3. Next add chopped onion and sausage into the skillet and cook for 6-8 minutes until sausage is browned and onions are translucent. Then transfer to casserole dish on top of cauliflower and broccoli.
  4. In a mixing bowl, combine cream cheese, sour cream or plain greek yogurt, 1 cup shredded cheese, dijon mustard, thyme, and salt + pepper. Mix all together until thoroughly incorporated.
  5. Stir the mixture into the casserole dish and mix around until everything is well combined. Add remaining shredded cheese on top.
  6. Bake for 20-25 minutes or until cheese golden brown.
  7. Remove from oven and serve.
