Broccoli-Leek Soup

Ingredients

  • 2 Tbsp olive oil
  • 2 Leeks finely chopped
  • 1 lb broccoli trimmed into 1″ pieces
  • 4 cups stock – vegetable or chicken
  • Salt & pepper to taste

Directions

  1. Heat oil in saucepan, then add chopped leeks and sauté on medium heat until soft, 2-5 minutes. Then add broccoli and stock.
  2. Simmer until vegetables are soft 15-25 minutes.
  3. Remove from heat.
  4. Puree in blender or with an immersion blender
  5. Return soup to medium heat and season with salt and pepper.
  6. Ladle into bowls and garnish with sour cream or yogurt. Top with croutons and chopped chives.
