Brussels Sprouts Salad
Ingredients
1 lb brussels sprouts
1 cup dried cherries
2 oranges, peeled and sliced
1/2 cup sliced almonds, toasted
Dressing:
1/2 cup olive oil
1/2 cup rice wine vinegar
1 Tbsp honey (or more to taste)
2 tsp poppy seeds
1 tsp kosher salt
1/2 tsp pepper
Directions
Use a knife to thinly slice the sprouts crosswise, stopping as you reach the base (discard the bases)
Transfer the shredded sprouts to a large bowl. Add the dried cherries, almonds, and orange slices. Toss to combine
In a small bowl or jar, combine olive oil, rice vinegar, honey, poppy seeds, salt and pepper. Pour over the salad and toss until well coated
Cover and refrigerate for at least 1 hour before serving to tenderize Brussels sprouts and marry the flavors.
