Brussels Sprouts Salad

Ingredients

  • 1 lb brussels sprouts
  • 1 cup dried cherries
  • 2 oranges, peeled and sliced
  • 1/2 cup sliced almonds, toasted

Dressing:

  • 1/2 cup olive oil
  • 1/2 cup rice wine vinegar
  • 1 Tbsp honey (or more to taste)
  • 2 tsp poppy seeds
  • 1 tsp kosher salt
  • 1/2 tsp pepper

Directions

  1. Use a knife to thinly slice the sprouts crosswise, stopping as you reach the base (discard the bases)
  2. Transfer the shredded sprouts to a large bowl. Add the dried cherries, almonds, and orange slices. Toss to combine
  3. In a small bowl or jar, combine olive oil, rice vinegar, honey, poppy seeds, salt and pepper. Pour over the salad and toss until well coated
  4. Cover and refrigerate for at least 1 hour before serving to tenderize Brussels sprouts and marry the flavors.
