Buffalo Cauliflower Steaks with Blue Cheese Coleslaw
Ingredients
Buffalo Cauliflower
1 large head cauliflower
1/2 cup buffalo sauce
salt and pepper
Blue Cheese Coleslaw
3 cups coleslaw mix
1/4 cup Greek yogurt blue cheese dressing or your favorite blue cheese dressing
2 Tbsp finely chopped fresh parsley
1 Tbsp minced red onion
salt and pepper
Directions
Buffalo Cauliflower
Preheat oven to 400°F convection (or 425°F if you don’t have a convection setting).
Line a baking sheet with parchment paper.
Slice the cauliflower from top down to the bottom/core in 1 inch slices. You should end up with 3-4 “steaks” from the center of the cauliflower.
Place cauliflower steaks on the parchment paper and brush both sides with the buffalo sauce.
Season with salt and pepper.
Roast for 20 minutes, carefully flipping half way through.
While cauliflower is roasting, combine all ingredients in a small bowl for blue cheese coleslaw and mix together until well combined.
Take cauliflower out of oven, transfer to a plate, and top with blue cheese coleslaw.
