Cherry Walnut Granola with Fresh Berries

Ingredients

  • 5 cups oats
  • 1 cup walnuts, chopped
  • 1/4 cup pumpkin seeds
  • 1/4 cup sunflower seeds
  • 1/4 cup Kandarian chia seeds
  • 2 tbsp Kandarian flax seeds
  • 1 Tbsp cinnamon
  • 1 tsp salt
  • 1/4 cup dried cherries
  • 3/4 cup coconut oil
  • 1/2 cup pure maple syrup
  • 1 Tbsp vanilla
  • 1 tsp almond extract (optional)
  • Strawberries
  • Blackberries

Directions

  1. Preheat oven to 325 F.
  2. In a large bowl, combine oats, walnuts, pumpkin seeds, sunflower seeds, chia seeds, flax seeds, cinnamon, and salt.
  3. In a pyrex, melt coconut oil. To the measuring pyrex, add maple syrup, vanilla, and almond extract. Stir to combine.
  4. Mix wet ingredients into dry ingredients and stir to coat evenly.
  5. Spread granola mixture onto a large sheet pan in one even layer. Bake for 40-45 minutes until golden brown.
  6. Add dried cherries at the end of cooking on top of warm granola and let cool on sheet pan before storing into a container (dried cherries can burn or turn crunchy if baked with granola) .
  7. Serve with yogurt or milk and fresh berries.
