Chicken and Peppers
Ingredients
¼ cup soy sauce
¼ sherry
2 teaspoons ground ginger
1 lb boneless, skinless chicken breast, cut into 1 inch slices
2 tablespoons olive oil
1 cup chopped onions
2 cloves garlic, crushed
3 bell peppers, sliced
½ cup water
Directions
In a medium bowl, combine soy sauce, sherry, ginger and chicken. Marinate several hours in the refrigerator.
In a large skillet, heat oil over medium heat. Add onions and garlic. Cook 3 minutes, stirring frequently.
Add peppers. Cook 3 minutes.
Add chicken and marinade. Cook, stirring frequently, until chicken loses its pink color.
Reduce heat to low. Add water, cover and cook 15 minutes, stirring occasionally.
