Chicken Tacos

Healthy Chicken Tacos


  • 2 tsp paprika
  • 1 tsp ground cumin
  • 1/4 tsp dried oregano
  • scant cayenne pepper (optional)
  • 1 tsp salt
  • 1 tsp ancho chili powder
  • 1 medium yellow or 3 spring onions with tops, finely chopped
  • 1 bell pepper (any color), finely chopped
  • 1 lb zucchini, diced
  • 2 cloves garlic, finely chopped
  • 1 lb ground chicken
  • 1 can black beans, drained and rinsed
  • 1/2 cup salsa
  • 1/4 cup cilantro, chopped (optional)


  1. Mix first 6 ingredients in a small bowl. In a large saute pan over medium heat, cook onions and bell peppers for about 5-10 minutes. Add garlic and zucchini and cook another 5 minutes. Add spice mixture and stir to mix. Add chicken, breaking into small clumps and cook about 10 minutes. Add salsa and black beans and simmer on low until ready to serve. Sprinkle cilantro over if desired.
  2. Serve over salad with grated cheese and chips or in taco shells.
