Chioggia Beet and Goat Cheese Galette

Ingredients

For the Pastry: (or store bought)

  • – 1 1/4 cups all-purpose flour
  • – 1/2 teaspoon salt
  • – 1/2 cup (1 stick) unsalted butter, cold and cubed
  • – 4-5 tablespoons ice water

For the Filling:

  • – 2 chioggia beets, roasted and peeled
  • – 4 ounces goat cheese, crumbled
  • – 1 tablespoon olive oil
  • – 1 teaspoon fresh thyme leaves
  • – Salt and pepper to taste
  • – 1 egg, beaten (for egg wash)

Directions

  1. Prepare the pastry: In a large bowl, combine the flour and salt. Add the cold, cubed butter and use a pastry cutter or your fingers to mix until the mixture resembles coarse crumbs. Gradually add ice water, one tablespoon at a time, mixing just until the dough comes together. Do not overwork it. Shape the dough into a disc, wrap it in plastic wrap, and refrigerate for at least 30 minutes.
  2. Roast the beets: Preheat your oven to 400°F. Wrap the beets in aluminum foil and roast them for about 45-60 minutes, or until tender when pierced with a fork. Once cool, peel the beets and slice them into thin rounds.
  3. Assemble the galette: Preheat your oven to 375°F (190°C). On a lightly floured surface, roll out the chilled pastry dough into a roughly 12-inch circle. Transfer it to a baking sheet lined with parchment paper. Arrange the sliced beets in a circular pattern in the center of the dough, leaving about a 2-inch border. Sprinkle the crumbled goat cheese over the beets, and drizzle with olive oil. Add thyme, salt, and pepper to taste. Fold the edges of the dough over the filling, pleating as you go to create a rustic look. Leave the center exposed.
  4. Bake: Brush the edges of the galette with the beaten egg to give it a golden color. Bake in the preheated oven for about 30-35 minutes, or until the crust is golden brown and the filling is warm.
  5. Serve up a slice with a beautiful side of little gem lettuce dressed with your favorite olive oil and balsamic vinegar. Delicious lunch or light dinner!
