Chipotle Cinnamon Pumpkin Soup

Ingredients

  • 1 diced onion
  • 5 minced garlic cloves
  • 1/2 tsp cinnamon
  • 1/2 tsp cumin
  • 1/2 tsp nutmeg
  • salt and pepper to taste
  • 3 1/2 cups low-sodium vegetable or chicken broth
  • 16 oz. of pumpkin puree and 1 tablespoon chipotle chili in adobo sauce
  • Garnish with Greek yogurt and cilantro

Directions

  1. Heat 1 tablespoon oil (try using cinnamon olive oil!) in a large saucepan over medium heat. Add onion; cook 4 minutes. Add garlic cloves, cinnamon, cumin, nutmeg, salt and pepper; cook on low for about 2 minutes. Add low-sodium vegetable or chicken broth. Add pumpkin puree and chipotle. Chili in adobo sauce; simmer for 20-30 minutes. Puree in a food processor or blender. Garnish with Greek yogurt and cilantro.
