Cowboy Pie

Ingredients

  • 1 lb ground beef
  • 1 oz taco seasoning
  • 1 lb tomatoes, diced
  • 1/2 lb orange sweet peppers, diced
  • 2 ears of corn, kernels removed
  • 15 oz can black beans, rinsed and drained
  • 1/2 cup shredded mexican cheese
  • 6 oz can tomato paste
  • 15 oz box cornbread mix – plus milk, egg, and  oil to make cornbread mix
  • Shredded cheese, sour cream, diced jalapeno, spring/green onion, etc. for topping

Directions

  1. Preheat oven to 350 degrees and lightly coat a casserole dish with cooking spray. Set aside.
  2. Brown ground beef in a large skillet. Once meat is cooked, add in tomato paste, diced tomatoes, diced peppers, corn, and taco seasoning. Simmer for about 7-8 minutes, then remove from heave and stir in black beans.
  3. Next, follow instructions for cornbread mixture and mix in a large bowl until well combined.
  4. Pour chili into prepared baking dish and top with cornbread batter. Bake for about 30 minutes or until cornbread is lightly golden. Sprinkle mexican cheese on top of cornbread, then cook for an additional 5 minutes until cheese is fully melted.
  5. Take out of oven, then let cool for 5-10 minutes. Serve into bowls and finish with desired toppings.
