Cucumber Tomato Salad

Ingredients

  • 1 lb bag mini cucumbers, sliced
  • 12 oz tomatoes, diced
  • 1/2 medium red onion, thinly sliced
  • 1/2 cup chopped fresh herbs like dill, mint, or basil
  • 2 tbsp olive oil
  • 1 tbsp red wine vinegar
  • Seasoning to taste

Directions

  1. Combine all ingredients in a bowl and mix well so everything is coated. Taste mixture and feel free to add more olive oil or vinegar, if desired.
  2. Refrigerate for at least 20 minutes before serving.
  3. Optional: You can also add feta cheese to this recipe!
