1/2 cup mayo (option: 1/4 cup mayo plus 1/4 cup yogurt)
1 Tbsp fresh lemon juice
1 Tbsp honey
1 tsp soy sauce
1 Tbsp curry powder
salt and pepper to taste
Directions
Using cooked chicken breast or rotisserie chicken, shred about 2 cups worth. To a bowl add shredded chicken, diced red onion, diced celery, chopped toasted almonds and raisins.
In another small bowl or jar combine dressing ingredients. Taste and adjust seasoning as necessary.
Combine dressing with chicken salad and allow to sit in the fridge for at least one hour. Serve with toasted wheat bread, pita, or crisp endive lettuce.
