Delicious Corn Salad

Ingredients

  • 3 cups of corn kernels (about 4 cobs of corn)
  • ½ cup bell pepper
  • 1-2 sweet red pepper(s)
  • 1 -2 sweet yellow pepper(s)
  • ½ cup red onion chopped up
  • ¼ cup Cilantro – chopped up
  • 1 Tablespoon olive oil
  • 1/4 teaspoon Cheyenne pepper
  • Salt and pepper to taste

Directions

  1. Grill corn, and all peppers.
  2. Cut corn from cob and dice the peppers.
  3. Combine all ingredients in a large bowl.
  4. Season with Cayenne pepper, salt, and pepper.
  5. Note: Start small with Cheyenne pepper and continue to taste, it does give it a kick! You can add tomatoes, avocados, celery, and artichoke hearts too.
