2 lbs small red potatoes. If larger, slice in 1 inch pieces
1/3 – 1/2 cup onion soup mix (see homemade onion mix recipe)
4 Tbsp olive oil (try garlic or rosemary olive oil)
Dry Onion Soup Mix (makes 1/2 cup)
1/2 cup dried onion flakes
1 tsp onion powder
1 tsp garlic powder
1/2 tsp celery seed or flakes
1/2 tsp pepper
1 tsp dried parsley
1 tsp salt
Directions
Preheat oven to 450 degrees. Mix olive oil and spices in a large bowl. Add potatoes and mix well. Pour potatoes onto a large roasting pan and bake about 20-30 minutes, stirring once, until potatoes are soft or crispy depending on how you like them. Serve immediately. These many turn out a bit dry. You can serve with butter or mix them with olive oil before serving.
For Dry Onion Soup Mix: Mix together. Store in an air tight container. Yields 2 packets of commercial dried onion soup mix or 1/2 cup.
