Fresh Apricot Salsa

Ingredients

2-3 whole apricots, chopped
1/2 fresh lime, juiced
1 teaspoon salt
1/2 teaspoon Red Wine Vinegar
1 whole medium tomato, finely chopped
3 tablespoons white onion, finely chopped
2 teaspoons Jalapeno, finely chopped
1 teaspoon honey (Orange Blossom)
1 tablespoon Cilantro, finely chopped
1 avocado diced into small chunks (optional)

Directions

Combine finely chopped tomato, onion, jalapeno, and cilantro in a medium sized bowl
Sprinkle with salt, red wine vinegar, and lime juice, stir until mixed.
Add chopped apricots and avocados – stir gently.
Drizzle with honey and stir well.
