Fresh Apricot Salsa

Ingredients

  • 2-3 whole apricots, chopped
  • 1/2 fresh lime, juiced
  • 1 teaspoon salt
  • 1/2 teaspoon Red Wine Vinegar
  • 1 whole medium tomato, finely chopped
  • 3 tablespoons white onion, finely chopped
  • 2 teaspoons Jalapeno, finely chopped
  • 1 teaspoon honey (Orange Blossom)
  • 1 tablespoon Cilantro, finely chopped
  • 1 avocado diced into small chunks (optional)

Directions

  1. Combine finely chopped tomato, onion, jalapeno, and cilantro in a medium sized bowl
  2. Sprinkle with salt, red wine vinegar, and lime juice, stir until mixed.
  3. Add chopped apricots and avocados – stir gently.
  4. Drizzle with honey and stir well.
