Grilled Arugula and Artichoke Stuffed Mushrooms

Ingredients

  • 2 large portabella mushrooms
  • 1 cup of chopped arugula
  • ½ cup of marinated artichoke hearts, finely chopped
  • ½ cup shredded mozzarella cheese
  • ¼ cup parmesan cheese
  • ½ tsp olive oil
  • salt and pepper for seasoning

Directions

  1. Preheat grill to 400 degrees. Mix arugula, artichokes, cheese and seasonings in a medium bowl.
  2. Gently twist off the stem inside the portabella mushrooms, then use a spoon to scrape off the brown gills from the inside.
  3. Stuff mushrooms with veggie and cheese mixture.
  4. Place stuffed mushrooms on the top rack of the grill so it’s off the direct heat, then let cook for 20 minutes.
  5. Once everything is lightly browned and cheese is well melted, take off the grill, let rest for a few minutes, then enjoy!
