Grilled Romaine Caesar Salad

Ingredients

  • 1 head of romaine
  • 1 lemon
  • 1/2 cup caesar salad dressing
  • 1/4 cup grated parmesan cheese
  • Extra virgin olive oil
  • Salt and freshly ground pepper

Optional toppings:

  • Croutons
  • Cooked protein – chicken or salmon

Directions

  1. Preheat grill to medium heat (~350 degrees).
  2. Cut the head of romaine in half, including the stem.
  3. Drizzle olive oil over the cut sides of the lettuce, or use a pastry brush.
  4. Sprinkle some salt and black pepper over the cut sides.
  5. Cut lemon in half.
  6. Place cut romaine and lemon directly on grill.
  7. Grill romaine for a couple minutes on one side, then flip, and grill for a couple more minutes.
  8. Take grilled romaine and lemon halves off.
  9. Top each half of romaine with dressing, parmesan cheese, then croutons and protein if adding.
  10. Squeeze the salad with grilled lemon, then enjoy!
