Ground Turkey Stuffed Acorn Squash

Ingredients

  • 2 acorn squash
  • 1 bunch of spinach
  • 1 apple
  • 1 lb of ground turkey
  • ½ cup chopped walnuts
  • 2 Tbsp of olive oil

Directions

  1. Preheat oven to 375 degrees.
  2. While oven is preheating, cut acorn squash in half from top to bottom and scoop seeds out. Lightly drizzle with olive oil and place squash open side down on a pan. Put squash in oven for 30 minutes or until fork tender.
  3. While squash is roasting, preheat a pan with 1 Tbsp of olive oil. Once pan has warmed up, begin cooking ground turkey. While turkey is cooking, cut up apple into small pieces. About halfway through the turkey cooking process, add in chopped apple and season pan with preferred seasoning. Once turkey is almost done cooking, chop up one bunch of spinach and add into pan until wilted.
  4. After 30 min, or once the squash is tender, take out of oven and turn over. Fill each squash boat with turkey mixture and put back in the oven for another 10 min. Take out of oven, let cool for 5 minutes. Enjoy!!
  5. *Note: You can eat the skin of an acorn squash! It will get tender when the squash cooks.
