Instant Pot Beans and Greens

Ingredients

  • 1 bunch of black lacinato kale, thinly chopped
  • 1 cup of dried pinto beans
  • 1 onion, chopped
  • 1 Tbsp minced garlic
  • 4 cups of chicken or vegetable broth
  • 1-2 cups of sausage or ham (optional)

Directions

  1. Combine all ingredients in a 6-quart instant pot and toss to coat the kale. Seal the top and cook on manual for 30 minutes. This will take about 20 minutes as the pressure starts to rise, then it will beep and automatically count down to 30 minutes.
  2. When 30 minutes is passed, it will beep and start counting back up as the pressure inside is naturally released. Once the float valve drops down, about 15-20 minutes, you can open the lid.
  3. Enjoy with hot sauce and some cornbread!
