Lemon Garlic Green Cabbage Slaw

Ingredients

  • 1 small head of green cabbage, finely shredded
  • 1 cup thinly sliced celery
  • 1 cup thinly sliced cucumber
  • 1/2 cup fresh parsley, chopped
  • 1/4 cup green onions, sliced
  • 1/2 cup mayonnaise
  • 2 tbsp lemon juice (freshly squeezed)
  • 1 clove garlic, minced
  • 1 tbsp honey
  • 1 tsp salt
  • pickled jalapeno for a kick, optional

Directions

  1. Step 1. Prepare the Vegetables: In a large bowl, combine the shredded cabbage, celery, cucumber, parsley, and green onions.  If you are adding the jalapeno, add.
  2. Step 2. Make the dressing: In a separate bowl, whisk together the mayonnaise, lemon juice, minced garlic, honey and salt until smooth.
  3. Step 3. Combine: Pour the dressing over the cabbage mixture and toss well to coat all the vegetables evenly. If you’re using raisins or cranberries, fold them in now.
  4. Step 4. Chill: For best flavor, allow the slaw to chill in the refrigerator for at least 30 minutes before serving. This helps the flavors meld together.
  5. Step 5. Serve: Give it a good toss before serving and enjoy as a refreshing side or topping!
