Lettuce Wraps

Ingredients

Ingredients:

  • 1 Tbsp canola oil
  • 1 lb ground chicken

Sauce:

  • 2 garlic cloves, minced
  • 1 Tbsp ginger, grated
  • 1/4 cup hoisin
  • 2 Tbsp soy sauce
  • 1 Tbsp rice wine vinegar
  • 2 tsp sesame oil
  • 1 Tbsp sriracha (optional)

Lettuce Wrap:

  • 1 head butter lettuce (romain or iceberg work also)
  • 1 carrot, grated
  • 1 cup cilantro leaves
  • 4 radishes, sliced
  • 2 green onions, thinly sliced

Directions

  1. Heat a skillet over medium high heat. Add canola oil and ground chicken.
  2. While chicken is browning mix the sauce. Combine garlic, ginger, hoisin, soy sauce, rice wine vinegar, sesame oil, and sriracha. Once chicken is browned add the sauce and simmer until the ground chicken absorbs all the sauce, about 10 minutes.
  3. Meanwhile, wash and prepare lettuce. Use two leaves per lettuce wrap and place on a platter.
  4. In a small bowl, mix the grated carrot, cilantro leaves, sliced green onion, and radishes.
  5. To serve, add a heaping scoop of chicken to each lettuce cup and top with the salad garnish.
