Heat a skillet over medium high heat. Add canola oil and ground meat.
While the meat is browning, mix the sauce together. Combine garlic, ginger, hoisin, soy sauce, rice wine vinegar, sesame oil, and sriracha. Once chicken is browned add the sauce and simmer until the ground meat absorbs all the sauce, about 10 minutes.
Meanwhile, wash and prepare lettuce. Use two leaves per lettuce wrap and place on a platter.
In a small bowl, mix the grated carrot, cilantro leaves, sliced green onion, and radishes.
To serve, add a heaping scoop of meat to each lettuce cup and top with the salad garnish.
