2 lbs orange sweet potatoes, sliced into 1/4 inch rounds
2 cups shredded cheddar or mexican cheese
15 oz can black beans, drained and rinsed
1 lb diced chicken or seasoned ground beef, precooked
1 lb tomatoes, diced
1/2 cup chopped pickled jalapenos (optional)
1/2 cup chopped green onion
1/2 cup chopped cilantro
2 avocados, pit removed and diced
2 tbsp olive oil
2 tsp chili powder
2 tsp garlic powder
2 tsp ground cumin
1 tsp garlic salt

Directions
Preheat oven to 400 degrees.
Toss the sweet potatoes in olive oil and season with chili powder, garlic powder, cumin, and garlic salt.
Place the sweet potato rounds on a large baking sheet. You might need two baking sheets if you run out of room, you don’t want to overcrowd the sweet potatoes.
Bake for 20 minutes, then use a spatula to flip the sweet potato rounds and bake for an additional 10 minutes, or until the sweet potatoes are crisp.
Remove the pan from the oven and sprinkle with cheese, black beans, and cooked meat (if using).
Bake until cheese is melted, about 8-10 minutes.
Remove pan from oven and top with tomatoes, jalapenos, green onions, cilantro, avocado, and sour cream.
Serve immediately onto plates or bowls, you’ll probably need a fork to eat!
