Michelle’s Chicken Salad

Ingredients

  • 3 cups canned or shredded chicken
  • 1 cup red grapes cut in half
  • 1 cup of diced celery
  • ½ red onion, diced small
  • ½ cup sliced almonds
  • ½ cup of mayo
  • ½ cup of plain Greek yogurt or sour cream
  • ¼ cup of Dijon mustard
  • ¼ cup of chopped parsley (optional)
  • 1 Tbsp lemon juice
  • 1 tsp garlic powder
  • Salt and pepper to taste

Directions

  1. If using canned chicken, drain excess liquid. In a big bowl, combine chicken, grapes, celery, onion, and almonds then mix thoroughly. In a separate bowl, combine mayo, sour cream or Greek yogurt. Dijon mustard, lemon juice, garlic powder, salt/pepper and mix together. Pour dressing over chicken mixture and make sure everything is mixed together. Can be enjoyed right away or in an airtight container in the fridge for 3 days.
  2. Enjoy in a sandwich or lettuce wrap!
