Napa Orange Chicken Salad

Ingredients

  • 2 cups napa cabbage, chopped
  • 1 green onion, thinly sliced
  • 3 mini peppers, sliced
  • 1/2 persian cucumber, sliced
  • 1/2 cup edamame
  • 1 tangelo, segmented
  • 1 cup cooked chicken

Dressing Ingredients

  • 1/2 cup vegetable oil
  • 1/2 cup rice wine vinegar
  • 1 Tbsp sesame oil
  • 1 Tbsp honey
  • 1 tsp fresh ginger, grated
  • 1 garlic clove, minced
  • 1 tsp red pepper flakes (optional)

Directions

  1. To a large bowl add chopped napa cabbage, green onion, peppers, cucumbers, edamame, oranges, and chicken.
  2. To a small jar add all dressing ingredients, top with the lid and shake until well mixed.
  3. When ready to serve, toss the salad with desired amount of dressing. Reserve any remaining vinaigrette for future use in the fridge.
