Orange & Fennel Salad

Ingredients

  • 1 large fennel bulb
  • 2 celery ribs
  • 2-3 heads of little gem lettuce
  • 2 oranges, divided
  • 1/3 cup of pecans or walnuts

 

Dressing Ingredients:

  • ½ tsp orange zest
  • 1/3 cup vegetable oil
  • ¼ cup orange juice
  • 3 tbsp rice wine vinegar
  • 1 tbsp honey
  • 1 clove garlic
  • ¼ tsp pepper
  • 1/8 tsp salt

Directions

  1. Combine all dressing ingredients in a jar with a lid and shake until combine, set aside in the fridge.
  2. Cut the rind off of the orange and cut into segments.
  3. Thinly slice celery on the diagonal.
  4. Cut off the top stems of the fennel (these can be used in a stir fry) and remove any discolored outer leaves. Using a mandolin or very sharp knife, thinly slice the fennel bulb.
  5. In a bowl, add celery, fennel and mixed greens, drizzle with dressing, and toss well.  Garnish with walnuts and orange pieces, then enjoy!
