Orzo Bake

Ingredients

  • 1 12oz package of sausage (I used the Sweet Italian Chicken Sausage from Trader Joe’s)
  • 10.6 oz of Boursin cheese (2 5.3 oz packages)
  • 1 bunch of spinach
  • 1 lb tomatoes
  • 3 cups of low sodium chicken broth
  • 1 lb package of orzo pasta
  • 2 tbsp of minced garlic
  • 1/2 tbsp of garlic salt
  • Extra virgin olive oil

Directions

  1. Preheat oven to 400 degrees.
  2. Drizzle olive oil over the bottom of a 9×13 in casserole dish.
  3. Start assembling the bake by placing both blocks of cheese down in the casserole dish. Next, pour the orzo around the whole casserole dish, making sure it’s in an even layer.
  4. Pour chicken broth over the orzo, making sure it’s completely covered.
  5. Chop spinach up and place in 1/3 of the casserole dish.
  6. If using grape or cherry tomatoes, you can leave them whole. If you’re using bigger tomatoes, dice them into quarter sized pieces. Place tomatoes into another 1/3 of the casserole dish.
  7. Lastly, thinly slice the sausage and place in the remaining 1/3 part of the casserole dish. Finish with minced garlic and garlic salt on top.
  8. Cover casserole dish with tin foil and bake in the oven covered for 35 minutes.
  9. After 35 minutes, take out of the oven and mix all the ingredients together, then enjoy!
