1 can or 2 cups cooked large white beans plus the liquid (cannellini, lima, or butter beans)
1/4 cup cream
Chives for garnish (optional)
Directions
Heat a large sauce pot over medium heat. Melt butter and add diced leeks.
Sauté for about 5 minutes until translucent, then add the minced garlic salt and pepper.
Next add the diced potato and white beans along with any liquid. There should be enough liquid to help cook the potatoes but add water or stock if more is needed.
Simmer on low for about 15 minutes.
Once potatoes are soft, blend with immersion blender or mash by hand.
Finish with cream and season with more salt and pepper to taste.
