Potluck Mac Salad

Ingredients

  • 1 package macaroni noodles
  • 1/2 cup red onion, diced
  • 1/2 cup celery, diced
  • 1/2 cup black olives, chopped
  • 1 cup pickles, chopped (preferably Bubbies Pickles)
  • 1 cup bell peppers, diced
  • 3 green onions, chopped
  • 2 Tbsp fresh dill, chopped
  • 4 hard boiled eggs
  • 1 Tbsp dijon mustard
  • 2/3 cup pickle juice
  • 1 1/2 cup mayonnaise

Directions

  1. Add 4 eggs to a pot of cold water and bring to a boil. Once the water reaches a boil, immediately remove the heat and set a timer for 9 minutes. Remove eggs and place in an ice bath to cool.
  2. Using the same pot, cook macaroni noodles according to package directions. Drain and set aside.
  3. To a large serving bowl add cooked macaroni noodles, diced red onion, celery, black olives, pickles, bell peppers, green onion (white and green parts), dill, and chopped hard boiled egg.
  4. In a separate bowl mix together the mustard, pickle juice, and mayonnaise. Pour over the macaroni salad and toss to combine. Season with salt and pepper if necessary.
  5. For best flavor, allow this to sit covered in the refrigerator for a few hours or preferably overnight.
