4 Cara Cara oranges, segmented and cut into 1″ pieces
1 dry pint cherry tomatoes, cut in half or quarters
3 cloves garlic, minced
1 shallot, finely minced
8-10 basil leaves, chopped
Salt to taste
Whipped Feta Ingredients
8 oz feta cheese block, drained
3/4 cup plain greek yogurt
Zest from 1 lemon
2 tbsp extra virgin olive oil
Directions
Preheat the oven to 400 degrees F.
Start by cutting the baguette into 1/2″ slices and place on a large baking sheet.
Drizzle slices with extra virgin olive oil and bake for about 5 minutes or until golden. Remove from heat and set aside onto a plate.
Onto the same baking sheet, line with aluminum foil and add oranges, tomatoes, garlic, and shallots.
Drizzle with 3 tbsp olive oil and season with salt. Mix to coat everything.
Bake for about 25-30 minutes or until everything begins to melt down.
Next, make the whipped feta.
In the bowl of a food processor fitted with a blade, combine the feta, Greek yogurt, and lemon zest. Blend, and while the food processor is running, drizzle olive oil through the top opening, until the feta is whipped to a smooth mixture.
Store whipped feta in the fridge until ready to use.
To assemble, smear each piece of toast with whipped feta, then spoon on orange and tomato mixture.
Top with chopped basil and serve immediately.
If you have any tomato/orange mixture leftover, you can use it on top of fish or chicken. If you have any whipped feta leftover, you can save it to dip veggies in!
