Roasted Fingerling Potatoes, Peppers and Onions with Garlic


  • 2 clove garlic
  • 2 lbs Fingerling potatoes
  • 1onion
  • ¼ cup olive oil
  • 2 sweet peppers


  1. Preheat oven to 425 degrees F. In a large bowl combine fingerling potatoes, peppers, onions and garlic. Season with salt and pepper.
  2. Pour olive oil over vegetables and toss well to coat. Spread vegetables on rimmed baking sheet. Roast, stirring occasionally, for 30 to 40 minutes until vegetables are soft and begin to caramelize.
