Roasted-Garlic Asparagus

Ingredients

  • ¼ cup olive oil
  • 4 cloves garlic, minced
  • ½ tsp onion powder
  • 1 Tbsp chopped fresh parsley or 1 tsp dried parsley
  • 1 lb asparagus, ends trimmed
  • Salt and ground black pepper

Directions

  1. Preheat oven to 400 F. Line a large jelly-roll pan with parchment paper. Spread asparagus in a single layer on the pan.
  2. Lightly sprinkle with salt and pepper. In a small pot, heat oil, garlic onion powder and parsley on medium-low heat.
  3. Cook 3 minutes until mixture is fragrant but not browned. Drizzle garlic-oil mixture onto asparagus. Roast for 8-10 minutes until the asparagus are bright green. Do not overcook.
