In an oven safe baking dish, toss together tomatoes, onion, garlic, olive oil, salt and pepper.
Roast in oven for 40 minutes, or until tomatoes release their juices and onion becomes soft and translucent.
Remove from the oven and add basil and parsley while hot. Once cooled blend to a smooth consistency and enjoywith pasta or fresh baked garlic bread. See recipe for chicken parmesan!
