Roasted Tomato Marinara

Ingredients

  • 1 lb (5-6) tomatoes, quartered
  • 1/4 yellow onion
  • 2 garlic cloves, peeled
  • 2 Tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1/4 cup basil (optional)
  • 2 Tbsp fresh parsley

Directions

  1. Preheat oven to 400 F
  2. In an oven safe baking dish, toss together tomatoes, onion, garlic, olive oil, salt and pepper.
  3. Roast in oven for 40 minutes, or until tomatoes release their juices and onion becomes soft and translucent.
  4. Remove from the oven and add basil and parsley while hot. Once cooled blend to a smooth consistency and enjoy with pasta or fresh baked garlic bread. See recipe for chicken parmesan!
