Salmon with Lemon and Dill

Ingredients

  • 1 lb salmon
  • 1 lemon, zest and juice
  • 2 garlic cloves, minced
  • 1 Tbsp fresh dill, chopped
  • 1 Tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp pepper

Dipping Sauce

  • 1/4 cup sour cream
  • 1 Tbsp olive oil
  • 1 Tbsp fresh lemon juice
  • 1 garlic clove, minced
  • 1 Tbsp fresh dill, chopped
  • Salt and pepper to taste

Directions

  1. Preheat oven to 350 degrees
  2. Place salmon in a baking dish and coat with olive oil. Season with salt, pepper, the zest of one lemon, dill, and minced garlic.
  3. Slice the lemon as thin as you can and layer slices over the seasoned salmon. Reserve some lemon for the dipping sauce.
  4. Bake salmon for about 20 minutes until cooked through and no longer opaque.
  5. To make the dipping sauce, add ingredients to a small bowl and stir to combine. Serve alongside the freshly baked salmon.
