Sarah’s Chinese Napa Cabbage Salad
Ingredients
Dressing
1 cup vegetable oil (not olive oil)
4 Tablespoons sugar
6 Tablespoons seasoned rice vinegar
1 teaspoon salt
1 teaspoon pepper
1 packet seasoning from Top Ramen Noodles
1 cup slivered almonds, toasted
Salad
1 head Napa cabbage, chopped
1 bunch green onions, sliced
1/4 cup cilantro, chopped (or more to taste)
3/4 lb. snap peas (optional)
2 packs Top Ramen Noodles (packets reserved) uncooked
Directions
For dressing: combine ingredients and whisk until blended.
For salad: combine all items and toss.
Pour dressing over salad and mix at least 1/2 hour before serving. Refrigerate until served.
