Sheet Pan Miso Salmon and Vegetables

Ingredients

  • 1-1.5 lb of salmon
  • 1 lb brussels sprouts, broccoli, or cauliflower
  • 1 lb Japanese sweet potatoes (2-3)
  • Olive oil for drizzle

Glaze

  • ¼ cup miso paste
  • ¼ cup soy sauce
  • 2 Tsp sesame oil
  • 2 Tbsp honey
  • 1 Tbsp rice wine vinegar
  • 1 Tbsp black sesame seeds
  • 1 Tbsp garlic
  • 1 tsp ground ginger
  • 1 Tbsp sriracha (optional)

Directions

  1. Preheat oven to 400 degrees.
  2. Line sheet pan with aluminum foil.
  3. Cut brussels sprouts into quarters and spread across pan. Then cut sweet potatoes into ½ inch slices, then cut slices into quarters, and spread across pan.
  4. Drizzle vegetables with some olive oil then bake for 20 minutes on their own.
  5. While vegetables are cooking, mix all ingredients of the glaze together.
  6. After 20 minutes, take vegetables out of the oven and move to make room on pan for salmon.
  7. Reduce oven to 325 degrees. Place salmon skin down then drizzle glaze over salmon and vegetables.
  8. Cook for another 20 minutes until salmon is cooked through.
