Spinach Quiche

Ingredients

  • 1 (9 inch) store bought pie crust
  • 1 bunch of spinach – remove stems
  • 1/2 cup chopped onion
  • 1 cup cheese of choice (cheddar, swiss, or a mixture of both)
  • 4 eggs, lightly beaten
  • 1 cup half-and-half cream
  • 1/3 cup of bacon bits (or substitute mushrooms – both optional)
  • Salt + pepper to taste

Directions

  1. Preheat the oven to 400 degrees F.
  2. Sauté the spinach with some olive oil until wilted down.
  3. Place pie crust in a pie pan on a baking sheet.
  4. Mix bacon, chopped onion, sauteed spinach, and cheese in a medium bowl then pour this mixture into the crust.
  5. Mix eggs and half and half in a bowl until blended; pour the egg mixture over the cheese mixture.
  6. Bake in preheated oven for 15 minutes. Reduce heat to 350 degrees F and bake until the top of the quiche begins to turn golden brown, an additional 35 minutes.
